    Thanks so much for sharing this. My family and I are using your video to help us break down our angus cross beef we slaughtered a few weeks ago. Its been a big help!     Now that’s how you break down beef!! Awesome job man! I was taught similar to the way you do it but not always hanging. Much easier left hanging!

    Looks like the boning knife you used (blue handle) is an F. Dick 6", what is the flex (stiff, 1/2 flex or flex)? Are you still liking the Victory knives? I see you have the purple and pink handles along with the black handle breaking.

      Good eye. It is a 1/2 flex F dick. My breaking knife is one of our braned Victory 8 inch knives found on our website. Then I have a 6 in purple hallow ground victory and a pink victory ribbing knife. I use the F dick knives on the Team I'm apart of. Butchers Of America. The United States Butchery Team. We have our own logoed knives from victory that we sell on our website. I have used alot of knives over the years looking for one that I like. I love the bigger handle on the victory blades. It fits in my hand comfortably. I like the blade on the F dick. It holds an edge for a long time.

    Are y'all not required to wear a net for beard?

      We have beard net equirements as per our HACCAP for longer than 1 inch. We are a custom exempt and retail exempt. Thanks for the question

    Im beginner butcher learning but we dont saw through steaks its all knife cuts well we only handsaw when we need to cut through bone you make bonening beef look easy

      It takes them up to 2 years to be able to wield a knife skillfully.
