  • Norwegian pancakes:

    125 g butter

    6 medium eggs

    6.5 dl whole milk

    1 tbsp sugar

    2 tsp vanilla sugar

    1/2 tsp salt

    500 g wheat flour

    Butter for frying

Melt the butter in a saucepan or in the microwave. Set it aside at least 15 min. Whisk together the eggs, add the milk and melted butter in a thin stream.

Add the sugar, vanilla sugar and salt. Sift in the flour. Stir until the batter is smooth and fine without lumps. If necessary, use a hand mixer to get the batter completely smooth.

Put some butter in a frying pan. When the butter has melted, add just enough batter to cover the entire pan. Turn the pan well in all directions so that the batter comes out well at the edge of the frying pan. Fry until the pancake is no longer runny on top.

Flip and fry until golden on both sides. Use medium heat for best results.
